Hello there mon sexy poulet, glad to hear you're trying out haste aswell!
Haste is something you'd want to go for if you want your damage to be focused around a combustion rather then hot streak proccs when crit stacking. So like you've figured out yourself, 1 might work better with a specific comp then the other. To find out wich works best with what you'd have to look at the benefits of your stat-stacking.
Haste = faster casts, shorter global cooldowns and more dot ticks. Your damage is focused on combustion mainly, therefor you would want a clean combustion wich can't be despelled, preferably playing with a affliction warlock for unstable affliction.
So I'd say haste would work best with a warlock combined, spreading all your dots without having them dispelled is a dream come true, keeping your dots up all the time is massive damage aswell.
Crit = simply more crit wich equals theoratically more hot streaks. You rely on your pyroblasts to proc to burst down someone like crazy, the only downside is you can't rely on your burst as much as you do when you're haste.
If you're playing fire RMP and your rogue is asking you if you're ready for a swap cause his kidney shot is ready and you follow him onto the next target, you might not get any hot streaks off and loose your short window of time to kill someone. Obviously this would have happened with haste aswell, the only difference is during that short window of time you would have gotten more spells of, some which would add a extra dot-tick also which in total does more damage all together which might've made the difference.
Haste only needs 1 hot streak to proc for the craziest combustion ever, whereas you would want 2-3 (or more) hot streaks to proc as crit to burst someone down as soon as f*cking possible. Pardon my french (lolol c wut i did ther).
Crit would probably be best for lesser-represented comps that require random heavy bursts every now and then and less coordinated kills such as fire/feral/disc for example. Both crit and haste would work extremely well in fire/frost/disc also.
